Green chicken curry with bamboo
Gang Kiau Wan Gai

Serves 4

500 g (1 lb) chicken fillets

 
500 g (1 lb) canned bamboo shoots
400 ml (13 fl oz) coconut milk
1 ts green curry paste (Gang Kiau Wan)
3 tb fish sauce
3 tb sugar  
 
= available at Asian grocers
Takes 30 minutes plus time to marinade


1.
Slice chicken.
2. Drain bamboo shoots.
3. In a pot bring 5 tb coconut milk to boil.

Add curry paste and stir. Cook for one minute.
5. Add chicken, bamboo shoots, fish sauce, sugar, rest of the coconut milk and a little bit water and simmer for ten minute
