Noodles with soy bean sprouts

Serves 4

300 g (10 oz) Chinese egg noodles
200 g (6 1/2 oz) soy bean sprouts  
3 spring onions  
1 clove garlic  
3 tb oil  
2 tb fish sauce
2 tb oyster sauce
2 tb sugar  

= available at Asian grocers


Takes 25 minutes

  1. In a pot bring water to boil and simmer the noodles for ten minutes. Drain noodles and wash with cold water.
  2. Wash soy bean sprouts, cut spring onions into 2 cm long pieces.
  3. Peel garlic and chop
  4. Heat oil in a wok or a pan. Add garlic and stir-fry until golden. Add noodles and stir-fry.
  5. Add soy bean sprouts, spring onions, fish sauce, oyster sauce and sugar and continue to stir-fry for three more minutes.
